Because, I am from northern side of Turkey and also my family loves fish, I grow up with fish especially small fishes like anchovies, sardines, exct. Even thought I left my country 15 years ago and since I went back only 4 times, today I am homesick. I miss my home town, fish and much more…
I will use pide bread for this sandwich which also traditional bread especially in Ramadan season in Turkey. We bake pide in my restaurant every day so it is easy to find pide in Cali, Colombia.

Ingredients
· 2 big (500gr) Red Onions
· 2 cans (50gr/each) Anchovies filet
· 1 medium size (axp.200gr) Red pepper
· 200gr Parsley
· 5 teaspoon (5gr) Olive Oil
Slice fine to onions and in frying pan with medium heat start caramelize them. I use olive oil in the Anchovies cans but if you need more you can add more. Olive oil gives very nice taste as well as glazed look to caramelized onions. It takes 10~15 min to caramelized those onions but make sure mix them so often otherwise they will burn quickly.
Mean time start to roast red pepper directly over the heat. Make sure each side roasts evenly. When you roast red pepper skin burns to black and inside cooks with steam and gets smoked taste. Then clean the burned skin and seeds inside. Slice them fine and mix them with caramelized onion.
Also add to this mix anchovies filets and quick mix your filling it is ready. After take over the heat mixture add cores chopped parsley to them.
Cut pide bread at the middle and fill with your mixture. Please consume while its hot.
